Ingredients
- 3 12 lbs ground sirloin
- 2 green bell peppers, diced
- 1 large yellow onion, diced
- 2 tablespoons butter
- 3 (28 ounce) cans diced tomatoes
- 2 (15 1/2 ounce) cans dark red kidney beans
- 1 (6 ounce) can tomato paste
- 1 (15 ounce) can tomato sauce
- 1 (16 ounce) can tomato soup
- 6 large garlic cloves, minced
- 1 tablespoon chili powder
- 1 tablespoon garlic powder
- 1 teaspoon cumin
- 1 tablespoon salt
- 1 tablespoon pepper
- 12 cup shredded sharp cheddar cheese (to garnish)

1You'll need an 8-12 qrt.

3In a large skillet, break up and brown ground beef, drain thoroughly.

4While ground beef is browning, dice onion, bell pepper and mince garlic.

5Heat butter in the cooking pot, add onion, bell pepper and garlic, cook until soft and flavors have fused.

6Add the beef and stir in remaining ingredients to pot, cover and bring to boil for about 20 minutes, stirring occasionally.

7Lower heat to simmer, cover and continue simmering for about 4-6 hours stirring occasionally.

8The longer it simmers, the better it will be.

9It should be noted too, you can mix together your favorite beans, red, dark red, pinto, black, whatever.

10All the ingredients can be tweaked to your liking.

11When serving, you can add the shredded cheese -- I also found that a drizzle of yellow mustard and a few drops of Green Tabasco gives it a great chili dog flavor with out the dog.
