- 3 eggs, separate white and yolks
- 1 to 2 Tbsp. flour
- 1/2 tsp. salt
- Monterey Jack cheese
Directions

1Cut cheese into strips and stuff into peppers.

2Beat egg whites and salt until very stiff.

3Combine egg yolks and flour until mixed.

4Fold in egg whites.

5Dip chilies into batter and fry in oil, turning once, until brown and eggs are set.
