- 8 long cubes Monterey Jack cheese
- 8 eggs, separated
- 1 c. flour
- oil for frying

1Heat oil in large skillet.

2Cut a seam down middle of each chili.

4Whip egg whites until stiff, but not dry.

5Fold in slightly beaten egg yolks.

6Roll chilies in flour. Dip in egg mixture.

7Fry to golden brown.

8Serve with your favorite chili sauce.
