Chili Rellenos Bake

Ingredients

  • 1 large can (27 oz.) whole green chilies
  • 2 c. grated Monterey cheese
  • 1/2 c. chopped green onion
  • 1 c. grated sharp Cheddar cheese
  • 6 eggs, beaten with 3 c. milk
  • 1/4 c. flour
  • 1 tsp. cumin powder
  • garlic powder to taste
  • 3/4 tsp. salt
  • 1/2 tsp. pepper

Directions

    Butter a 9 x 13-inch baking dish. Place a layer of chilies on the bottom. Sprinkle with 1 cup Monterey cheese and 1/4 cup green pepper. Repeat this layer.

    Mix the remaining ingredients except the Cheddar cheese and pour over the casserole.

    Top with the Cheddar cheese. Bake in a 350° oven for 45 to 50 minutes or until knife comes out clean.

    Cool 5 minutes before serving.
