- 2 (7 1/2 oz.) cans whole chilies (Ortega)
- 1 large can evaporated milk
- 1 Tbsp. oil
- 1 lb. Jack cheese, sliced
- salt and pepper
- 1 lb. Cheddar cheese, grated
- 6 eggs, beaten
Directions

1Split chilies; remove seeds.

2Lay flat; rinse and drain.

3Rub oil on bottom and sides of two 9 x 13-inch pans or two 9 x 9-inch pans.

4Spread 1/2 of the chicken in each pan or pans, skin side down.

5Place sliced cheese on chilies; sprinkle with salt and pepper.

6Beat eggs and milk; pour over cheese and peppers (chilies).

7Sprinkle with grated Cheddar cheese.

8Bake in a 350° oven for 45 minutes.

9Serve hot with salsa.
