Chili Rellenos(Serves 10)

Ingredients

  • 3 (7 oz.) cans whole green chilies or more
  • 1 lb. Cheddar cheese, grated
  • 1 lb. Monterey Jack cheese, grated
  • 4 eggs, separated
  • 1 pt. half and half or milk
  • 3 Tbsp. flour
  • salt and pepper
  • 1 (14 oz.) can tomato sauce or equivalent salsa (spicier)

Directions

    Layer in flat, 9 x 12-inch or larger dish.

    Open chilies and lay flat to cover casserole dish.

    Add 1/2 of each cheese.

    Repeat chilies and cheese (2 layers).

    Mix flour and yolks, milk, salt and pepper.

    Beat egg whites until stiff.

    Blend egg whites with flour mixture gently.

    Pour flour and egg mixture over the top and bake at 325° for 45 minutes.

    Pour tomato sauce or salsa over the top (with additional chopped chilies, if desired) and bake 30 minutes more.
