Ingredients
- 3 (7 oz.) cans whole green chilies or more
- 1 lb. Cheddar cheese, grated
- 1 lb. Monterey Jack cheese, grated
- 4 eggs, separated
- 1 pt. half and half or milk
- 3 Tbsp. flour
- salt and pepper
- 1 (14 oz.) can tomato sauce or equivalent salsa (spicier)
Directions

1Layer in flat, 9 x 12-inch or larger dish.

2Open chilies and lay flat to cover casserole dish.

3Add 1/2 of each cheese.

4Repeat chilies and cheese (2 layers).

5Mix flour and yolks, milk, salt and pepper.

6Beat egg whites until stiff.

7Blend egg whites with flour mixture gently.

8Pour flour and egg mixture over the top and bake at 325° for 45 minutes.

9Pour tomato sauce or salsa over the top (with additional chopped chilies, if desired) and bake 30 minutes more.
