Ingredients

  • 2 tbsp oil
  • 2 None onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tsp salt
  • 1 tsp dried chili flakes
  • 1 tsp ground paprika
  • 1 tsp cayenne pepper
  • 1/2 tsp ground turmeric
  • 1 None lime, juiced
  • 2 1/4 lb medium raw shrimp, peeled, deveined, tails intact
  • 2 oz palm sugar, grated
  • 1 tbsp tomato paste
  • None None fresh cilantro leaves, rice and poppadoms, to serve

Directions

    Heat oil in a large frying pan over low heat. Add onions and garlic. Cook, stirring, over low heat for 10-15 mins, until onions are caramelized. Add salt and spices. Cook, stirring, for 1 min, or until fragrant. Add 1/2 cup water and lime juice. Simmer, covered, for 3-4 mins.

    Add shrimp, sugar and tomato paste. Simmer, uncovered, for 4-5 mins, until sauce thickens.

    Sprinkle with cilantro and serve with rice and poppadoms.
