  • 3 1/2 pork loin, cubed
  • 2 large purple onions, chopped
  • 4 large garlic buds, minced
  • 5 large Anaheim peppers (seed and all), chopped
  • salt and pepper to taste
  • 1 tsp. oregano
  • 1 tsp. celery seed
  • 1/4 c. lemon juice
  • 2 tsp. ground cumin seed

    Put all in crock-pot without water.

    Cook on low for 3 to 4 hours.

    Before serving, add flour and water for gravy.

    (If not hot enough, add 1/4 to 1/2 teaspoon crushed red pepper.)

    Adjust seasonings to taste.
