- 6 c. peanut oil
- 1 (4 oz.) can mild green chilies
- 1/2 lb. Monterey Jack cheese
- 2 separated eggs
- 1 Tbsp. flour
- 1/4 tsp. salt
- 1/4 c. flour
- 1 (8 oz.) can prepared enchilada sauce
Directions

1Pour oil in electric deep fryer.

2Preheat at 425° for 25 minutes.

3Meanwhile, drain green chilies and remove seeds.

4Cut cheese into strips.

5Insert a strip into each chile.

6Dredge each in flour and set aside.

7Beat egg whites to a soft peak.

8Beat together egg yolks, flour and salt until mixture is smooth.

9Fold in beaten whites.

10Coat each cube with egg mixture.

11Drop in hot oil.

12Fry until golden brown.

13Spoon hot oil over chilies, while frying, to brown tops.

14Remove and drain.
-
15Serve on warm platter topped with prepared enchilada sauce.
