- 1 lb. ground beef
- 1/2 c. chopped onions
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (4 oz.) can green chilies, cut in 1/2 and seeded
- 1 1/2 c. Cheddar cheese
- 1 (4 oz.) can chilies, seeded
- 4 beaten eggs
- 1 1/2 c. milk
- 1/4 c. flour
- 1/2 tsp. salt
- several dashes hot pepper sauce
- dash of pepper
Directions

1In skillet, brown ground beef and chopped onion; drain off fat.

2Sprinkle meat with salt and pepper.

3Place green chilies, cut in half and seeded, in 10 x 6 x 1 1/2-inch baking dish; sprinkle with shredded Cheddar cheese and top with meat.

4Arrange chilies over meat.

5Combine eggs, milk, flour, salt, pepper sauce and pepper; beat until smooth.

6Pour over chili mixture.

7Bake in moderate oven (350°) for 45 to 50 minutes, or until knife inserted off center comes out clean.

8Let cool 5 minutes and cut in squares.
