- 2 boneless skinless chicken breast halves
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- 12 cup chicken broth
- 1 (4 ounce) canchopped green chilies
- 1 teaspoon prepared mustard
- 1 garlic clove, minced
- 12 teaspoon salt
- 12 cup whipping cream
- 12 cup shredded monterey jack cheese
- 1 cup hot cooked rice
Directions

1In a large skillet, brown chicken in butter and oil for 10 minutes; drain.

2Add broth, chiles, mustard, garlic and salt.

3Simmer, uncovered for 10 minutes or until chicken juices run clear.

4Stir in cream; simmer until thickened.

5Sprinkle with cheese.

6Cover and Cook until the cheese is melted.
