  • 1 pound Ground Beef
  • 3/4 cup Onion -- chopped
  • 1 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Garlic Salt
  • 15 oz Red Kidney Beans
  • 15 oz Tomatoes -- cut up
  • 3/4 cup Quick Cooking Rice
  • 3/4 cup Water
  • 3 tablespoon Green Pepper -- chopped
  • 3/4 cup Shredded Cheddar Cheese

Directions

    In a skillet, cook ground beef and onion till beef is brown and onion is tende. Drain off the fat.

    Sprinkle meat mixture with salt, chili powder and garlic salt. Stir in undrained tomatoes, undrained beans, uncooked rice, green pepper and water.

    Cover and simmer, stirring occasionally, for 20 minutes. Top with cheese. Cover and heat for 3 minutes or till cheese melts. If desired, sprinkle with crushed corn chips.

    Variation 1: increase chili powder to 2 tsp, add 1 tsp cumin, and increase tomatoes to 1 quart (or a 28 oz can).
