Chinese Dumplings

- 2 c. flour
- 10 Tbsp. water
- 10 cabbage leaves
- 1/2 lb. ground beef, chicken or veal
- 2 tsp. cornstarch
- 1 Tbsp. soy sauce
- 1/4 tsp. sugar
- 1 c. chopped scallions
- Chinese sauces for dipping
Directions

1Boil cabbage for 1 minute, drain and chop.

2Mix beef with remaining ingredients and stir in cabbage.

3Stir water into flour, knead and shape into a ball.

4Roll dough into a sausage shape. Tear off bits of dough and shape each into a ball.

5Roll each with a rolling pin until you have a circle.

6Place 2 teaspoons filling in center of each and fold circle in half.

7Score edges.

8Drop one-by-one into boiling water and boil for 1 minute, then drain. Serve warm with soy sauce or other Chinese sauces.
