Ingredients
- 2 Tbsp. chopped onion
- 2 Tbsp. corn oil
- 1 c. converted rice, uncooked
- 2 1/2 c. water
- 2 beef bouillon cubes
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 eggs, slightly beaten
- 1/2 tsp. soy sauce
- 1/2 c. chopped green onions with tops
Directions

1In heavy skillet or wok, saute onion in oil until transparent, but not browned.

2Add rice, water, bouillon cubes, salt and pepper.

3Bring to a vigorous boil.

4Cover and cook over low heat until all water is absorbed, about 25 minutes.

5Stir in eggs and green onions.

6Cook until eggs are set.

7Stir in soy sauce.
