Granola Parfait

  • FOR THE GRANOLA:
  • 1/4 cups Maple Syrup
  • 1/2 cups Honey
  • 1/4 cups Apple Cider
  • 4 cups Oats
  • 1/2 cups Bran
  • 1/2 cups Wheat Germ
  • 1/2 cups Unsweetened Flaked Coconut
  • 1/2 cups Sunflower Seeds
  • 1/2 cups Raisins
  • FOR THE PARFAIT:
  • 1 cup Blueberries
  • 1/4 cups Pistachios, Finely Chopped
  • 2 cups Vanilla Yogurt
  • 2 Tablespoons Honey, Drizzled Over Top

    For the granola:

    1. Preheat oven to 325°F degrees.

    2. Line a baking sheet with parchment paper and set aside.

    3. Using a medium saucepan over low heat, combine maple syrup, honey and apple cider and stir for 5 minutes, until smooth.

    4. In a large mixing bowl, combine oats, bran, wheat germ, coconut, sunflower seeds and raisins. Add the syrup over top and stir until well coated.

    5. Pour out onto the parchment paper and smooth out. Cook for 30 minutes, stirring ever 10 minutes.

    For the granola parfait:

    1. Mix the blueberries and pistachios through the granola.

    2. Layer the granola with the yogurt. Top with a drizzle of honey.
