- 2 Tbsp. oil (peanut oil is best)
- 2 c. onions, coarsely chopped
- 2 c. cooked rice (cold)
- 2 eggs, slightly beaten
- 1 Tbsp. soy sauce
- 1/2 tsp. salt
Directions

1Heat pan.

2Add oil and fry onions until brown.

3Add cold rice and saute.

4Add eggs, seasoned with soy sauce and salt.

5Saute until done.

6For variety, add 2 cups chopped, cooked meat (bacon, ham, shrimp or chicken), chopped pepper or peanuts (shelled and roasted).

7Serves 4 to 6.
