- 1 c. long grain rice (3 c. cold, cooked rice)
- 6 large eggs
- 1/2 tsp. salt
- salad oil
- 1/2 c. frozen peas, thawed and drained
Directions

1Prepare rice as label directs.

2In a bowl with a fork, beat eggs and salt slightly.

3In a nonstick skillet over medium heat in 2 tablespoons of hot salad oil, gently stir rice until well coated with oil.

4Push rice to one side of skillet.

5In same pan over medium-high heat heat 1 tablespoon of oil until very hot; pour in eggs.

6Cook with spoon, stirring quickly and constantly until eggs are the size of peas and leave side of pan.

7Mix eggs with rice. Stir in peas; heat through.
