Chinese Fried Rice

- 2 c. cold cooked rice
- 1 bunch scallions, finely chopped (green tops, too)
- 1/2 lb. fresh mushrooms, finely chopped
- 1/2 green pepper, finely chopped
- 2 Tbsp. vegetable oil
- 3 Tbsp. soy sauce or to taste
- 1 egg, beaten
- 1/2 c. finely chopped cooked pork or beef (I use leftover roast pork or beef)
Directions

1Saute veggies in oil until soft (do not burn).

2Add a little more oil, if you feel mixture is too dry.

3Add cold rice, meat and soy sauce to make rice brown.

4Then add beaten egg and freshly ground pepper.

5Fry another minute or two.
