- 3 Tbsp. butter
- 1/3 c. chopped scallions
- 1 1/3 c. rice
- 1 egg
- 2 to 3 Tbsp. soy sauce
Directions

1Bring 1 cup of water to boil in saucepan.

2Stir in rice.

3Cook over medium heat until tender.

4Meanwhile, cook egg in butter in a 10-inch skillet until set.

5Add scallions and rice; cook and stir over medium heat until rice and scallions are lightly browned. Combine remaining water and soy sauce.

6Stir mixture into rice.
