- 3 Tbsp. bacon drippings
- 1/2 c. chopped shallots
- 1 c. celery
- 1 small can mushrooms, sliced
- 3 Tbsp. soy sauce
- 1 slightly beaten egg
- crumbled bacon to taste
- 2 1/2 c. cold cooked rice
- add any chopped leftover chicken or pork
Directions

1Add bacon drippings, shallots and celery in large frying pan. Saute until tender.

2Add mushrooms, cooked rice and soy sauce. Cook 10 minutes on low heat stirring occasionally.

3Stir in egg and cook until done.

4Stir in crumbled bacon and serve.

5Add extra soy sauce if desired.

6Makes 6 servings.
