Chinese Fried Rice

Ingredients

  • 3 Tbsp. bacon drippings
  • 1/2 c. chopped shallots
  • 1 c. celery
  • 1 small can mushrooms, sliced
  • 3 Tbsp. soy sauce
  • 1 slightly beaten egg
  • crumbled bacon to taste
  • 2 1/2 c. cold cooked rice
  • add any chopped leftover chicken or pork

Directions

    Add bacon drippings, shallots and celery in large frying pan. Saute until tender.

    Add mushrooms, cooked rice and soy sauce. Cook 10 minutes on low heat stirring occasionally.

    Stir in egg and cook until done.

    Stir in crumbled bacon and serve.

    Add extra soy sauce if desired.

    Makes 6 servings.
