Chinese Vegetable Pizza

  • 2 yellow squash
  • 2 zucchini
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 large onion
  • 8 cloves of garlic
  • 5 Tbsp. soy sauce
  • 1/2 tsp. black pepper
  • 4 pieces flat bread, round 6 inch size
  • 1/2 cup parmesan cheese
  • 6-8 oz. sliced mozzarella cheese

    Wash all veggies.

    Cut squash, zucchini, and peppers into thin slices.

    Quarter garlic.

    Cut onion into thin stringy slices.

    Mix all veggies well, add 5 Tbsp. soy sauce, garlic and black pepper, mix again.

    Place veggies in lightly sprayed grilling basket.

    Cook on BBQ grill for 15 minutes or until veggies get tender.

    Heat oven to 375F.

    Place bread on baking sheet, place veggies on top of bread in equal amounts.

    Sprinkle with mozzarella cheese and dust with parmesan cheese.

    Bake for 10-12 minutes or until cheese has melted.

    Can be served with Jalapeno Soy Dip.
