Ingredients

  • 2 boneless skinless chicken breasts, cut into 1 inch pieces
  • 1 green bell pepper, chopped
  • 2 tablespoons vegetable oil
  • 1 (14.5 ounce) can Red Gold(R) Petite Diced Tomatoes with Chipotle
  • 2 cups chicken broth
  • 1 cup long grain white rice
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese

Directions

    In a large skillet heat oil and brown chicken and green bell pepper. Add remaining ingredients, except cheese, and bring to a boil.

    Cover and cook for 17 to 20 minutes or until all liquid is absorbed. Sprinkle with cheese and cook an additional 5 minutes to melt cheese.
