  • 2 cups diced onions
  • 1 cup red bell pepper, chopped
  • 1 12 teaspoons garlic, minced
  • 1 14 lbs lean ground beef
  • 3 tablespoons brown sugar
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 12 teaspoon fresh ground black pepper
  • 14 teaspoon salt
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 (15 ounce) cans dark red kidney beans, rinsed and drained
  • 4 (14 1/2 ounce) cans diced tomatoes, undrained
  • 1 (14 ounce) can tomato sauce
  • 2 chipotle chiles, canned in adobo sauce, minced

Directions

    Heat a Dutch oven over medium-high heat.

    Add onion, bell pepper, garlic, and beef to pan; saute 10 minutes or until beef is browned and vegetables are tender.

    Add remaining ingredients to pan, stirring to blend; bring to a boil.

    Reduce heat; simmer 20 minutes or until slightly thickened, stirring occasionally.

    Cover and continue to cook on low for another hour.
