Chipotle Cilantro Lime Rice

- 1 cup Basmati Rice
- 2 cups Water
- 4 teaspoons Vegetable Oil, Divided
- 1 teaspoon Salt
- 1/2 whole Fresh Lime Juice
- 3 Tablespoons Fresh Cilantro, Chopped
Directions

1In a medium pot add rice, water, 1 teaspoon of the oil, and salt. Boil on high until most of the water evaporates. When the water just covers the top of the rice, reduce to low and cover for 15 minutes.

2Remove from heat and cover for another 5 minutes.

3In a small bowl combine the lime juice, cilantro, and remaining oil. Stir well and add to rice.
