Chipotle Corn Chowder

  • 1 T Butter
  • 2 T Minced Garlic
  • 2-12 oz cans sweet corn
  • 2 Ribs Celery(finely diced)
  • 1 Medium red or white onion(finely diced)
  • 1 Carrot (finely diced)
  • 2 C chicken stock-(Homemade if you can)
  • 2 C Heavy Cream
  • 1 6-8 oz can Chipotle Peppers(in Adobo sauce if you can find it)-finely diced or food processed
  • 1 tsp Paprika
  • 1 T Salt
  • 1 T Pepper
  • 1tsp cayenne pepper
  • Corn Starch and water to thicken...I leave that to you...make a slurry of both and add during a boil until it thickens to desired consistency.
