Ingredients

  • 8 ounces, weight Shredded Cheddar Cheese
  • 4 ounces, weight Shredded Monterey Jack Cheese
  • 1/2 cups Mayonnaise
  • 8 ounces, weight Frozen Corn, Thawed
  • 4 ounces, weight Chopped Green Chilies
  • 1 clove Garlic, Minced
  • 2 teaspoons Chipotle Peppers In Adobo Sauce, Finely Chopped (you Can Add More For More Heat)
  • 1/4 cups Diced Tomatoes (can Add More To Taste)
  • 3 whole Green Onions, Chopped
  • 2 Tablespoons Chopped Cilantro

Directions

    Preheat oven to 350 degrees.

    Stir all ingredients together.

    Put in a baking dish.

    Bake for 25 minutes.

    Top with diced tomatoes, sliced green onion and chopped cilantro.

    Serve with tortilla chips.

    *Note: First seven ingredients can be combined the night before to let flavors meld.
