  • 2 pounds Boneless, Skinless Chicken Breasts
  • 3 Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 1 whole Chipotle Pepper (from A Can), Minced
  • 1 whole Lime, Juiced
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
  • 1 Tablespoon Butter

    Split chicken breast into smaller strips to make for more even grilling.

    In a medium bowl, mix together 2 tablespoons of olive oil plus next 5 ingredients (garlic through pepper).

    Place the chicken into the bowl with the marinade, turning to coat all of the pieces.

    Cover the bowl and allow to marinate in the refrigerator for up to 2 hours.

    After chicken has marinated, place 1 tablespoon each of olive oil and butter into a grill pan over medium heat.

    Place the chicken in the pan and allow to cook for about 5 minutes on each side, or until cooked through.

    Timing will vary depending on how thick or thin you sliced the chicken.

    Remove chicken from the pan and cover with tin foil and allow to rest for 10 minutes.

    Slice chicken for salads or serve on its own!
