Chipotle Salsa

Ingredients

  • 1 (28 ounce) can tomatoes
  • 2 chipotle chiles (canned in adobo)
  • 3 jalapenos (de-seeded and diced finely)
  • 12 small yellow onion (diced)
  • 2 garlic cloves (finely diced)
  • 23 cup cilantro (chopped, packed loosely)
  • 14 teaspoon chili powder (try ancho chile powder too)
  • 14 teaspoon cumin
  • 12 lime, juice of
  • 12 teaspoon white vinegar

Directions

    Blend the tomatoes, chipotles and 1 of the jalepenos in a food processor.

    Pulse till blended.

    Transfer to a bowl and stir in the remaining ingredients.

    Add salt to taste, stir and enjoy!
