- 1 (28 ounce) can tomatoes
- 2 chipotle chiles (canned in adobo)
- 3 jalapenos (de-seeded and diced finely)
- 12 small yellow onion (diced)
- 2 garlic cloves (finely diced)
- 23 cup cilantro (chopped, packed loosely)
- 14 teaspoon chili powder (try ancho chile powder too)
- 14 teaspoon cumin
- 12 lime, juice of
- 12 teaspoon white vinegar
Directions

1Blend the tomatoes, chipotles and 1 of the jalepenos in a food processor.

2Pulse till blended.

3Transfer to a bowl and stir in the remaining ingredients.

4Add salt to taste, stir and enjoy!
