Ingredients
- 3 pkg. dried beef
- 3 (8 oz.) pkg. cream cheese
- 1 jar horseradish (about 6 oz. or to taste)
- 1 bunch scallions, cleaned and cut to approximately 5 inches and chopped
Directions

1Put cream cheese in microwave for a minute or until soft. Stir the cream cheese until creamy and then add horseradish and scallions.

2Open the dried beef.

3Save 10 or 12 of the outside slices.

4Tear the remaining dried beef and add to cream cheese mixture.

5Place the reserved pieces of beef on plastic wrap. Form a base, approximately 3 x 12 inches for the log.

6Put the cream cheese mixture on the beef to form a log.

7Cover with the rest of the beef.

8Roll into a log.

9Refrigerate for 24 to 48 hours.

10Serves about 20.

11Serve on mini bagels or Triscuits. Leftovers will freeze for a month if wrapped tightly.
