  • 10 lb. chitterlings
  • 1/2 c. lemon juice
  • salt to taste
  • 1 Tbsp. cider vinegar
  • 1 onion, sliced
  • 1 clove garlic, crushed
  • 3 bay leaves
  • vinegar
  • hot sauce

Directions

    Clean chitterlings thoroughly, removing as much of the fat as possible.

    Place the chitterlings in a pot and add cold water, a little lemon juice and salt.

    Let stand for awhile.

    Change water, adding more lemon juice and salt as necessary.
  5. 5
    Rinse chitterlings thoroughly and put them back in the pot.

    Add cold water to cover, juice and the remaining ingredients.

    Bring to a boil.

    Cover and simmer until chitterlings are thoroughly tender, about 4 hours. Serve hot with vinegar and hot sauce on the side.
