- 10 lb. chitterlings
- 1/2 c. lemon juice
- salt to taste
- 1 Tbsp. cider vinegar
- 1 onion, sliced
- 1 clove garlic, crushed
- 3 bay leaves
- vinegar
- hot sauce
Directions

1Clean chitterlings thoroughly, removing as much of the fat as possible.

2Place the chitterlings in a pot and add cold water, a little lemon juice and salt.

3Let stand for awhile.

4Change water, adding more lemon juice and salt as necessary.

5Rinse chitterlings thoroughly and put them back in the pot.

6Add cold water to cover, juice and the remaining ingredients.

7Bring to a boil.

8Cover and simmer until chitterlings are thoroughly tender, about 4 hours. Serve hot with vinegar and hot sauce on the side.
