- 2 lbs chitterlings, very well cleaned
- 1 tablespoon whole cloves
- 1 red chili pepper, chopped
- 1 egg, slightly beaten
- 1 tablespoon water
- cracker crumb
- oil or fat, for frying
Directions

1Wash chitterlings very thoroughly and cover with boiling salted water.

2Add cloves and red pepper.

3Cook until tender, about 90 minutes (add more water if necessary).

4Drain; cut in pieces the size of oysters.

5Heat oil or fat to 370F in a fryer or large skillet.

6Dip each piece in egg beaten with water followed by a dip into the cracker crumbs.

7Fry until golden brown.
