- 1 tablespoon oil
- 1 cup flour
- 1/4 teaspoon salt
- 1 cup milk
- 2 large eggs
- 2 tablespoons fresh chives minced
Directions

1Oil 10 muffin cups and place in preheating oven set to 450F while preparing batter

2In a small bowl, combine flour and salt.

3In a blender or processor, combine milk, eggs, and chives. Blend well. Add dry ingredients and blend for 3 minutes.

4Remove muffin tin from oven and immediately pour in batter. Place in oven and bake 15 minutes. Reduce heat to 350F and bake an additional 10 minutes. (DO NOT open oven door or popovers may fall!)

5Remove from oven and pierce gently with a small, sharp knife to prevent collapsing. Serve warm with butter.
