Choco-Ginger Snowballs

  • 250 g plain sweet biscuits, crushed
  • 3 cups coconut
  • 1 cup crystallized ginger, chopped
  • 100 g butter, chopped
  • 350 g dark chocolate
  • 1 cup condensed milk

Directions

    Mix crushed biscuits, 3/4 cup of coconut and ginger in a large bowl.

    Over medium heat, melt butter and condensed milk until smooth and pour over dry mixture.

    Melt chocolate and mix through.

    Roll mix into small balls and roll in coconut and refrigerate until firm.
