Choco-Peanut Ring Cookies

  • 1/2 c. butter
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 1/2 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 15 small (about 1-inch) peanut butter cup candies, sliced in half crosswise

    Beat butter until creamy.

    Add sugars gradually and beat thoroughly.

    Beat in egg, then vanilla.

    Sift together flour, soda and salt; add to creamed mixture.

    Form into 1 1/4-inch balls and place on greased cookie sheets; flatten slightly.

    Press one peanut butter cup candy half in center of each cookie, peanut butter side up.

    Bake in 375° oven 10 to 12 minutes.

    Cool on wire racks. Makes 2 1/2 dozen cookies.
