- 36 chocolate wafer cookies
- 5 tablespoons unsalted butter, melted
- 1 (14 ounce) bag sweetened flaked coconut, about 5 1/3 cups
- 1 (14 ounce) can sweetened condensed milk
- 4 egg whites
- 1 14 cups sliced almonds
- 1 14 cups bittersweet chocolate chips
Directions

1Preheat oven to 350.

2Line a 9x13 pan with non stick foil that extends over the edges of the pan.

3Pulse cookies in a food processors until they are fine crumbs.

4Pulse in melted butter until evenly mixed.

5Press crumbs into the bottom of the foil lined pan.

6Bake 8 minutes.

7While the crust in baking, combine coconut, sweetened condensed milk and egg whites in a large bowl.

8Fold in 1 cup of sliced almonds.

9Remove pan from oven.

10Sprinkle bottom evenly with chocolate chips.

11Gently spoon coconut mixture on top.

12Spread evenly with a fork to keep it textured.

13Sprinkle top with remaining sliced almonds.

14Bake 30-35 minutes until top is set and golden brown.

15Let cool completely in pan on wire rack.

16Lift foil by ends onto cutting board.

17Cut into 12 squares and cut each square into 2 triangles.
