Chocolate Angel Cakes

- 30 g cocoa powder
- 185 g caster sugar
- 12 cup glace cherries
- 6 egg whites
- 125 g plain flour
- 1 cup icing sugar
Directions

1Preheat your oven to 180 degrees celsius.

2Sift the flour and 30g of cocoa into a bowl.

3Place 6 egg whites in the bowl of an electric mixer and beat until soft peaks form.

4Add 2 tablespoons from 185g of castor sugar and continue beating until the egg whites are quite stiff.

5Fold in remaining castor sugar,flour and cocoa powder.

6Grease a muffin tray well with butter,and fill 2/3 full with the mixture.

7Bake for 20-25 min .

8Cool slightly and carefully turn out onto a wire rack to cool.

9Place icing sugarb in a bowl and add some warm water,a tablespoon at a time,until you have a soft icing.

10Drizzle the tops of the cakes with the icing,allowing it to drip on the sides.

11Quarter 1/2 cup worth of cherries and use to decorate the cakes.
