Chocolate-Berry Shortcakes

- 10 tbsp (1 1/4 sticks) butter, at room temperature
- 1/2 cup sugar
- 2 1/2 cups flour, sifted
- 3 oz semi-sweet chocolate, grated
- 2 tbsp milk
- 1 tub (8 oz) mascarpone cheese
- 1 pint strawberries, sliced
- None None Unsweetened cocoa powder, for dusting
Directions

1Preheat the oven to 400°F. Line a baking sheet with parchment paper. Beat butter and sugar in a large bowl with an electric mixer on medium speed until creamy. Fold in flour and chocolate alternately with milk. Mix to form a stiff dough.

2Roll out dough on a lightly floured surface to 1/8-inch thickness. Cut out 12 hearts (or rounds) with a 3 1/2-inch cookie cutter. Place on prepared pan.

3Bake for 8-10 mins, or until crisp and golden. Cool in pan on wire rack.

4Spread a little mascarpone on half the shortcakes. Sprinkle with berries. Top with remaining shortcakes. Dust with cocoa powder. Serve immediately.
