Chocolate Brandy Pudding

- 180 g dark chocolate
- 140 g unsalted butter
- 3 eggs
- 4 egg yolks
- 125 g caster sugar
- 125 g plain flour
- 60 ml brandy
- cocoa, to dust
Directions

1Preheat oven to 180 C.

2Lightly grease 8 ramekins.

3Melt cho and butter in bowl over pot of simmering water.

4Set aside when combined and melted.

5Using electric beaters beat sugar and eggs and yolks together till pale.

6Fold choc mixture into egg mixture alternately with flour.

7Spoon pudding into ramekins, cook 15 minutes till just set.

8Set aside for 15 minutes then pour a little brandy over each pudding.

9Dust with cocoa and serve with ice cream.
