- 1/2 tsp. chili powder
- 1/4 tsp. ground cumin
- 4 oz. drained cooked beans
- 1/2 c. salsa
- 4 (4 oz.) baked potatoes
- 3 oz. grated Cheddar cheese
- 2 Tbsp. minced onions
Directions

1In a small skillet, heat oil; add pepper and cook, stirring often for 5 minutes.

2Reduce heat to low, add cumin and chili powder and cook 2 minutes, stirring constantly.

3Add beans and salsa, cover and simmer 5 minutes.

4Serve over hot, baked potatoes.

5Top with cheese and onion.
