Chocolate Bread Pudding

  • 2 (2 oz.) sq. semi-sweet chocolate
  • 1/2 c. light cream
  • 1 egg
  • 2/3 c. sugar
  • 1/2 c. milk
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 4 slices day-old bread, crusts off and cubed (about 3 c.)
  • confectioners sugar or whipped cream (optional)

Directions

    In saucepan, melt chocolate, remove from heat and stir in cream until smooth; set aside.

    In a large bowl, beat egg; add sugar, milk, vanilla and salt.

    Mix well.

    Stir in chocolate mixture; add bread and toss.

    Let stand 15 minutes.

    Spoon into greased 2-cup souffle dishes.

    Bake at 350° for 30 to 35 minutes. Top with confectioners sugar or whipped cream.
