  • 1/2 cups Cocoa Powder
  • 1/2 teaspoons Ground Coffee Beans
  • 1 teaspoon Baking Powder
  • 1/2 teaspoons Baking Soda
  • 1/2 teaspoons Salt
  • 3 Eggs
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 7 ounces, weight Sour Cream

Directions

    Preheat the oven to 180 C.

    In a large bowl, combine the dry ingredients (flour, cocoa, coffee, baking powder, baking soda and salt).

    In a separate bowl, beat the eggs with sugar, vanilla and sour cream. Add the egg mixture into the dry ingredients bowl and mix until everything is incorporated and smooth.

    Line a 12-count standard size muffin pan with paper liners. Scoop batter into baking cups.

    Bake for 20 to 25 minutes (or until a toothpick inserted in the center comes out clean).
