- 1/2 pounds Boneless Pork Roast
- 1 whole Green Pepper
- 14 ounces, weight Can Pineapple Chunks, In Juice
- 2 teaspoons Cornstarch
- 1 Tablespoon Soya Sauce
- 3 Tablespoons Vegetable Oil
- 2 whole Garlic Cloves, Minced
- 4 cups Cooked Rice
Directions

1Cut pork into thin strips.

2Cut green pepper into strips.

3Drain pineapple.

4Reserve liquid for sauce.

5Prepare sauce by stirring pineapple juice (it will be approximately 2/3 cup) with corn starch and soya sauce.

6Set aside.

7Heat oil in a fry pan or wok.

8Add meat and garlic.

9Cook until meat is cooked through (if using leftover pork, just heat to brown slightly).

10Remove meat and garlic from pan and then stir fry green peppers.

11Return meat to the pan.

12Add pineapple and sauce.

13Cook, stirring often, until sauce is thickened.

14Serve over rice.
