Chocolate Cherry Melts

  • 1 pkg. (225 g) Baker's Semi-Sweet Chocolate, chopped
  • 1 cup butter or margarine
  • 2 eggs
  • 1/4 cup granulated sugar
  • 3 Tbsp. brandy or rum
  • 1/2 cup glazed cherries, chopped
  • 30 Nilla Vanilla Wafers, coarsley chopped
  • 1/2 cup nuts, chopped

    IN heavy saucepan, carefully melt chocolate and butter over low heat.

    Beat eggs until thick, about 8 minutes.

    Gradually add sugar.

    Beat in chocolate and brandy.

    Fold in chopped cherries, crushed wafers and nuts.

    Spoon into small individual paper cups.

    Refrigerate until firm, about 1 hour.

    If desired, garnish with whipped cream and additional cherries.

    SERVE chilled.
