Chocolate Cookie Sandwiches

  • FOR THE COOKIES:
  • 12 Tablespoons Butter, Softened
  • 1/4 cups White Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup All-purpose Flour
  • 1/4 cups Cocoa Powder
  • 3 Tablespoons Cornstarch
  • FOR THE FILLING:
  • 4 ounces, weight Chocolate Chips
  • 2 Tablespoons Heavy Cream

    For the cookies:

    Preheat oven to 350 degrees F.

    Mix butter, sugar and vanilla in a medium sized mixing bowl until well combined. Add flour, cocoa powder and cornstarch. Beat until combined.

    Spoon tablespoon sized dollops of the dough onto a parchment paper lined baking sheet. Flatten gently. Bake 10-12 minutes. Then remove them from the oven and allow them to cool on the baking sheet for a few minutes before moving them to a cooling rack to cool completely prior to filling them.

    For the filling:

    Melt chocolate in a saucepan over low heat. Once it's melted, remove from heat and add in the cream. Stir until combined. Let cool.

    Spread chocolate filling on the backside of half of the cooled cookies. Then top the filling with another cookie, making a sandwich.

    * Make sure cookies and filling are completely cooled before frosting them.

    Makes approximately 10-12 sandwiches, depending on the size of the cookies.
