Chocolate Covered Cherries

  • 1 pound maraschino cherries
  • 1/2 cup butter
  • 1 pound powdered sugar
  • 4 tablespoons heavy cream
  • 1 teaspoon vanilla
  • coating chocolate

Directions

    Drain cherries; spread out on several layers of paper towel; dry well.

    Cream butter until fluffy. Mix sugar and cream and vanilla. Mix well and knead with hands. Let fondant rest in refrigerator for 1 hour, or up to 6 hours. This allows the ingredients to meld. Wrap a small amount of this fondant around cherries.

    Wax paper cookie sheets, and place cherries on the sheets. Chill and remove; let stand 30 minutes. Dip in melted chocolate.
