Chocolate Cream Pie

  • 1 1/2 c. sugar
  • 3 sq. unsweetened chocolate or 1/2 c. cocoa
  • 3 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 3 c. half and half
  • 3 egg yolks, slightly beaten
  • 1 Tbsp. butter
  • 1 1/2 tsp. vanilla

Directions

    Mix in saucepan the sugar, cornstarch, salt and milk.

    Cook over medium heat, stirring constantly, until mixture thickens and boils.

    Boil 1 minute.

    Remove from heat.

    Gradually stir in egg yolks.

    Boil 1 more minute.

    Pour into baked pie shell.

    Spread meringue on top of pie.

    Bake until brown at 400° (8 to 10 minutes).

    Cool to room temperature.
