- 3/4 c. unsweetened Dutch-process cocoa powder
- 1 1/2 c. sugar
- 1 1/2 tsp. baking soda
- 3/4 tsp. baking powder
- 3/4 tsp. salt
- 2 large eggs
- 3/4 c. warm water
- 3/4 c. buttermilk
- 3 tbsp. vegetable oil (such as safflower)
- 1 tbsp. pure vanilla extract

1Preheat oven to 350 degrees F. Line 2 standard muffin tins with paper liners.

2Whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt in a medium bowl.

3Mix in eggs, water, buttermilk, oil, and vanilla until smooth, about 3 minutes.

5Bake, rotating tins halfway through, until tops spring back when lightly touched, about 20 minutes.
