- 2 cans (15 1/2 Oz. Size) Black Beans
- 1/4 Green Pepper, Left Whole
- 1 teaspoon Minced Garlic
- 1 teaspoon Ground Cumin
- 1/2 teaspoons Black Pepper
- 4 whole Flour Tortilla Shells
- 1 cup Shredded Cheese
Directions

1Mix beans, pepper, garlic, cumin, and black pepper together in a saucepan.

2Bring to a slow boil and turn the heat down very low.

3Let simmer for approximately 20 minutes.

4Stir to keep the mixture from burning and sticking to bottom of the pain.

5Discard green pepper before serving (this was used strictly for flavoring purposes).

6Warm tortillas in microwave for a few seconds and divide the beans evenly among the four tortillas.

7Top with cheese.
