- 1/2 c. butter or margarine
- 1 c. boiling water
- 1 c. self-rising flour
- 4 eggs
Directions

1Add butter to water and cook until butter is melted.

2Add all the flour at once; stir vigorously until ball forms in center of pan.

3Cool a little.

4Add eggs, one at a time, beating after each addition.

5Mixture should be stiff.

6Put in pastry tube for eclair shape or use eclair pans or cookie sheet.

7Bake at 400° for 40 to 50 minutes.

8Split sides and fill when cool.

9Frost.

10Makes 8 to 12.
