Chocolate Frosting

Ingredients

  • 1 cup unsalted butter softened
  • 2 cups icing sugar
  • 1/2 cup unsweetened cocoa
  • 1/3 cup whipping cream or milk
  • 2 oz. semisweet chocolate, melted and slightly cooled
  • 1 t vanilla

    In bowl of an electric mixer fitted with the paddle attachment or using electric beaters, beat butter Add icing sugar, 1/2 cup at a time. Beat in cocoa powder. Beat in cream until icing is smooth and fluffy. With spatula, fold in melted chocolate and vanilla.

    Run a knife around the edge of each cake invert onto plates. Remove parchment paper from one cake. Place right side u on serving platter. Spread 3/4 cup of frosting over cake. Remove parchment paper from second cake. Place on top of frosting, bottom side up. Frost sides and top of cake.
